A comprehensive review of the philosophy, mindset, tools and techniques of lean management is presented.Given the distinct challenges of the dairy products sector, including limited shelf life and stringent hygiene standards, a value stream map was developed for the production processes of fruit yogurt, and bottlenecks and wastes were identified.
