Absztrakt

Gamma-glutamyl transpeptidase and its biochemical background have been a dynamic research field for the past decades. It comprises a unique gamma peptide bond that is responsible for cleaving the gamma-glutamyl amide bond of glutathione; a macromolecule involved in the cellular response to different stresses aka carbon and nitrogen stress. Morphologically, this enzyme enhances cell sporulation in A. nidulans. Industrially, GGT is well functionalized to serve in the various fields starting from enzymes and drug production to food manufacturing, and fermentation processes.
