dc.description.abstractIn recent decades, the ancient Hungarian fat pig has risen almost from the dust. The reason for this success story was a real market demand other than the world-famous Spanish serrano ham, which is made from Spanish ibérico pork and has parameters almost identical to those of mangalica (PAPP et al., 2013). The title of my paper reveals that one part of my research is about the habits of domestic mangalica meat and fat consumers and buyers, and the other part is looking for the answer to how nutritionally feels about the „healthier” perception of mangalica meat and fat that is still debated today.en
dc.description.abstractAz utóbbi évtizedekben szinte porából támadt fel az ősi magyar zsírsertés. Ennek a sikertör-ténetnek egy valós piaci igény volt az oka, mely nem más, mint a világhírű spanyol serrano sonka, ami a hispán ibérico sertésből készül, és paraméterei szinte megegyezik a mangalica adottságaival (PAPP et al., 2013). A közleményem címéből kiderül, hogy a kutatásom egyik része a hazai mangalica hús és zsír fogyasztók és vásárlók szokásairól szól, a másik része pedig arra keresi a választ, hogy táplálkozás élettani szempontból hogyan vélekedünk a mai napig vitatott mangalica hús és zsír „egészségesebb”megítéléséről.hu
