dc.description.abstractThe last few decades witnessed several changes in the Hungarian handi-craft confectionery industry. In the 1990s, after the change of regime the industry enjoyed a boom which lasted until the 2008 global economic crisis transforming the industry and making its situation more difficult. Although the industry encountered a few problems even before 2008, when the crisis infiltrated into the country, the Hungarian confectioners had to tackle more and more problems, including vocational training, qualification, learning, the use of raw materials, black economy, the spread of multinational companies, etc. Besides, the use of artificial materials and semi-finished products which ruined the prestige of the trade gained importance. In my paper I wish to explore the situation of the Hungarian traditional handi-craft confectionary industry and the most important factors which had a dramatic impact on it. In addition, I wish to present the past, the present and the future of confectionery. Relying on my research, I suggest that the core problem of the Hungarian handi-craft confectionery industry lies in the decreasing importance of the handi-craft products. The problem is directly influenced by the spread of multinational companies and the baker’s trade, the existence of the black economy and educational issues as well.en
dc.description.abstractA magyarországi kézműves cukrásziparban az elmúlt évtizedekben számos változás ment végbe. A rendszerváltás után az 1990-es években fellendült a szakma, ez a lendület egészen a 2008-as gazdasági világválságig kitartott, mely teljesen átalakította, megnehezítette az ágazat helyzetét. 2008 előtt sem volt problémamentes ez a szektor, de a válság begyűrűzése után egyre több gonddal kell megküzdenie cukrászainknak, ilyen például a szakképzés, szakemberek képzettsége, felkészültsége, alapanyag használat, feketegazdaság, multinacionális cégek térnyerése, stb. Ezen túl előtérbe kerülnek a mesterséges anyagok és félkész termékek használata, amelyek rontják a szakma presztízsét. Dolgozatom fő célkitűzése a magyarországi hagyományos kézműves cukrászati iparág helyzetének és az azt befolyásoló legfontosabb tényezőknek a feltárása. Ezzel együtt egy összefoglaló képet kívánok adni a cukrászat múltjáról, jelenéről és jövőéről. A kutatásaim alapján megállapíthatom, hogy a magyar kézműves cukrászipar központi problémája a kézműves cukrászipari termékek háttérbeszorulása a piacon. Erre a fő problémára közvetlenül hatást gyakorol a multinacionális láncok és pék szakma térnyerése, feketegazdaság megléte, illetve hozzájárul az oktatásbeli problémák.hu
