Celiac disease is a digestive and autoimmune disorder that results in damage to the lining of the small intestine, it is estimated to affect less than one percent of the susceptible population worldwide. This disease is caused by an inappropriate immune response to wheat gluten, barley, and rye. Three main pathways cause celiac disease; the environmental trigger (gluten), genetic susceptibility, and unusual gut permeability.
