dc.description.abstractDue to a lack of suitable preservation procedures, fresh fruits suffer a post-harvest loss of between 30 – 45 percent after harvest. Drying is the most traditional preservation method, and now it is possible to manage the drying process of fruits to overcome the issue of irregular drying, depletion of vitamins, diminution of consumable value, and deterioration of flavor substances that occur across the drying process, due to improvements in microprocessor, automate, and sensor technology. Because of this, we've created a sensor for monitoring the drying process of dried fruits that is both affordable and simple to use. The electrical signal from the sensor is converted using an Arduino nano controller, and the electrical conductivity is measured during the drying process. In addition to using gold and platinum coatings on our sensors to improve sensitivity and reduce electrophoresis. This study's conclusions suggest that future research should examine other critical quality factors of dried fruits, such as water content, water activity, and nutritional value. IoT (Internet of Things) can also be used to develop the technology, allowing farmers and companies to monitor and manage the operation from afar.hu_HU
