The effect of chewing gum with sour cherry extract on the inflammatory cytokine (TNF alpha) in human saliva

Since sour cherry extract inhibits the human salivary α-amylase enzyme activity and prevents the growth of Streptococcus mutans, it is necessary to investigate the effect of chewing gum with sour cherry extract on inflammatory cytokines in human saliva. TNF-α is a non-glycosylated protein that circulates throughout the body and serves as potent pyrogen, functions as a multipotent modulator of immune response. TNFα plays a main role in the pathogenesis of inflammatory diseases due to its diverse activities throughout the immune system. In this study, we used immune-based enzyme-linked immunosorbent assay (ELISA) for the evaluation of TNFα in saliva samples. This method can determine specific molecular parts and detect arrays from different samples. We analysed the values of TNFα inflammatory cytokine for both unstimulated and stimulated saliva with ANOVA method (GraphPad Prism 8 programme).
