To maintain food safety, it is important to consider the potential risks associated with food production, processing, and packaging. These activities can result in pollution of the air and soil due to the use of chemicals and additives, which may lead to environmental contamination. The ICP-MS instrument is the ideal technology for this task, as it offers the lowest detection limit, highest throughput, widest linearity range, and the fewest interferences when identifying hazardous substances in food. The sample preparation stage is a critical aspect of the analytical process, especially when measuring trace metals in oil samples. This is because some of these metals exist in very low concentrations, making their detection particularly challenging, this is the reason why two methods were applied; microwave digestion method and the microemulsion method. The elemental concentrations of 11 oil samples were examined in this study. The first seven samples were olive oils from various locations: Afrin, Syria (Olive oil Afrin); Idlib, Syria (Olive oil Idlib); Homs, Syria (Olive oil Homs); Sitia, Greece (Olive oil Sitia); Tuscany, Italy (Olive oil Tuscany); Spain (Olive oil Spain); and Aleppo, Syria (Olive oil Aleppo). The remaining four samples were sunflower oils purchased from Hungary, Sunflower Hu1, Sunflower Hu2, Sunflower Hu3, and Sunflower Hu4, respectively.
