dc.description.abstract	Doktori munkám során egy költséghatékony elemanalitikai módszert (MP-AES) fejlesztettem mézminták szervetlen komponenseinek mennyiségi meghatározására, majd az optimalizált módszert nagy mintaszámú hazai mézek sorozatelemzésével teszteltem. A mézek és a nektáradó terület, valamint a nektáradó növényfaj, a gyűjtési idő és a kisebb mennyiségben jelenlévő szervetlen komponensek (ásványi anyagok, nyomelemek és toxikus fémek) közötti kapcsolatok statisztikai feltárását több mint 250 minta összehasonlító elemzésével végeztem el. Régi mintákat tartalmazó sorozaton keresztül vizsgáltam, hogy a hazai termelői mézek milyen feltételekkel alkalmazhatók a nektáradó területek hosszabb időperiódusra vonatkoztatott állapotának becslésére. Tanulmányoztam a kezelési, tárolási és feldolgozási szokások hatását a mézek összetételére és minőségére nézve. Továbbá módszert fejlesztettem a mézekben lévő fémionok kapilláris elektroforézissel történő elemzésére univerzális belső standard (IUS) és indirekt UV detektálás alkalmazásával.	hu_HU
dc.description.abstract	In my thesis I developed a cost-effective multielemental analytical method for microwave plasma atomic emission (MP-AES) technique to quantitatively determine the inorganic components of honey samples. Then, to test the optimized method by a comparative analysis on more than 250 Hungarian honey samples collected from different areas and plants. Statistical analysis was carried out to explore the relationship between honeys and their botanical and geographical origin, the year of collection and the amount of inorganic components (minerals, trace elements and toxic metals). I investigated the applicability of honeys for the indication of environmental changes over a longer period of time by a unique sample series containing old honeys. I also studied the time-dependent effect of handling, storage and processing habits on the composition and quality of honeys. The development of a method for the analysis of metal ions in honey by capillary electrophoresis was also carried out using universal internal standard (IUS) and indirect UV detection.	hu_HU
