Eighteen maize samples with different treatments and inoculations were examined in this study. The treatments used included; toxinogenic, atoxinogenic and control. Aflatoxins determination using HPLC technique, determination of dry matter content, protein content and starch content. The statistical analysis used for the study for Aflatoxins B1, proteins and starch content were performed using the Two-Sample t-test specifically assumes unequal variances for the samples. From the results, it was observed that the year effect significantly affected maize grain contamination due to environmental factors. Atoxinogenic and toxinogenic treatments with Aspergillus flavus on the maize kernel’s protein and starch showed that there was no significant differences in the fungal inoculation.
