Bottom-up analysis of commercial protein supplements using CE-MS

The aim of the study is to focus on the analysis of commercial proteins and their composition with a bottom-up approach using capillary electrophoresis-mass spectrometry. There were eight different pea protein samples and the aim was to identify large number of proteins. We identified more than 200 proteins and 18 unique proteins were found with different protein id and mass in all samples.. This mainly includes storage proteins, which are essential proteins found in peas, such as vicilin, convicilin, legumin and their fragments. Then we compared the analytical performance of pea proteins with different lengths of bare fused silica and various injection volumes to get better results. We identified most of the similar proteins that could be identified in both lengths as having a high LogP value, but some were not also detected in specific lengths. Thus, we can say that, as the essential proteins that could be seen in peas, this could enhance plant-based proteins and used for commercial purpose.
