In this thesis I decided to come up with a new recipe for Ajvar that would be unique and different from the traditional one, and at the same time I would improve its nutritional value, which in some ways can help prevent many diseases. The ajvar I made is with turmeric and dietary fiber that will help with its consumption for diseases such as Alzheimer's disease.
